Greek Yogurt with Warm Cinnamon Apples and Raw Seeds

Mmmmmmm … this is seriously tasty you guys. It could be a light breakfast or lunch, or a filling snack. Today it was lunch, but I had a second bowl of it because I was still hungry and it is soooo good!

Ingredients:

  • 1 apple
  • 1 Tbsp. coconut oil 
  • Cinnamon 
  • Plain, nonfat greek yogurt (about a cup or however much you want) 
  • Healthy sweetener (such as stevia or maple syrup) 
  • Raw seeds (I used sprouted sunflower, pumpkin, and chia) 

Here’s what to do:

Dice up an apple (leave the peel on). Melt about a tablespoon of coconut oil in a skillet over medium-low heat, then add the apple along with several shakes of cinnamon. You want the apples to be covered in a light dusting of cinnamon. Don’t hold back! Cook the apples for a few minutes until they are just soft.

Put some plain, nonfat greek yogurt in a bowl. Then add just a bit of sweetener – I used a packet of stevia and a drizzle of maple syrup. You could also use a bit of honey or a hint of blackstrap molasses. Mix well. Then add the warm apples and whatever seeds you want. In this case I used some sunflower seeds I had sprouted as well as raw pumpkin and chia seeds – a couple tablespoons of each (a little less of the chia). Mix it together and then enjoy some creamy, healthy goodness!

Obviously this would also be delicious with homemade granola rather than just the seeds. But I love it this way because it is so fresh, healthy, and easy. Try it!!
