Chocolate Zucchini Cake

This cake was delicious!! I made it for Max’s 3rd birthday party. It is still cake, of course (so you shouldn’t be eating it every day!), but it is a much healthier alternative to a cake mix or any normal recipe. I kept going back for more, and I didn’t feel guilty about it since I don’t eat sweets very often. Now I just need to find another reason to make it! The recipe is from Unconventional Kitchen.

Ingredients

1 3/4 C raw sugar  (or 1 C raw sugar 3/4 C agave)
½ C coconut oil
1/3 C apple sauce
2 eggs
2 tsp vanilla
¾ C buttermilk
2 ¼ C kamut flour (or white whole wheat flour)
1 tsp cinnamon
½ tsp salt
1 tsp baking powder
1 tsp baking soda
4 T cocoa powder
2 C grated zuchinni
½ C chopped walnuts (I left these out)
½ C semi sweet or dark chocolate chips (I also think it would be good without them)

Directions

1.Preheat the oven to 350° and grease a glass 9×13 baking dish.
2. In a large mixing bowl beat the raw sugar and coconut oil together until creamy.
3.Add the eggs one at a time and beat to incorporate.
4.Next add the agave (if using), buttermilk, applesauce, and vanilla. Mix well.
5. In a separate bowl whisk together your dry ingredients; flour, cinnamon, salt, baking soda, baking powder, and cocoa powder.
6. Stir the dry ingredients into the wet ingredients, be careful not to overmix.
7.Fold the chocolate chips, zucchini,and walnuts into the batter.
8.Pour the batter into the baking dish and bake for 35 minutes.

I topped individual pieces with fresh whipped cream and strawberries which was delicious, but serve it however you’d like.
