Banana Oat Cookies

So, obviously, this blog is NOT about the photography. I like to take a snapshot of things with my iPhone when I remember to do so, but that’s it. In this case I was too lazy to even try to make it look good on a plate! Anyway, these are super simple and healthy cookies that make a great snack, especially for kids. Plus, they are so adaptable. I’ve seen a bunch of recipes that are similar to this, so I know you can take it in a lot of different directions. But now we know they actually turn out!

Ingredients

3 ripe, mashed bananas
1/2 cup unsweetened applesauce
2 cups regular oats
1 tsp cinnamon
1 tsp vanilla
dried fruit – whichever kind and however much you want (I used chopped up dried apricots and cranberries sweetened with apple juice instead of sugar)

Directions

Preheat oven to 350. Then, combine everything in a mixing bowl by hand. Put spoonfuls onto a parchment-lined baking sheet (in the shape you want them to be, because they don’t spread out as they bake). Bake for 15-20 minutes. Let cool for a few minutes and enjoy!
